How the scales line up
Celsius and Fahrenheit convert exactly (F = C times 9/5 plus 32). Gas marks step in roughly 14-degree Celsius jumps, mark 4 being 180. Fan or convection ovens run about 20 degrees cooler than conventional for the same browning, because moving air heats food faster.
Fan versus conventional
If a recipe gives a conventional temperature and you have a fan oven, drop it by about 20 degrees Celsius, or one gas mark, and check a little early. Gas mark values are approximate because ovens and charts vary; treat the nearest mark as a guide and trust a thermometer.
